INGREDIENTS: - 1/2 lb Fedelini
- 4 Tablespoons Olive Oil
- 2 Tablespoons garlic, minced
- 4 anchovy filets, finally minced (about 1/2 can)
- Hot red pepper flakes, 1/2 to 1 tespoons
- Juice of 1 lemon
- 3 Tablespoons water
DIRECTIONS: While boiling fedelini, heat oil in a large skillet, at LOW heat,
add minced anchovy. Stirring constantly, melt the anchovy, watch carefully only
takes a minute. Add garlic, stirring constantly, just heat the garlic do not brown.
Add red pepper flakes. Add 3 tablespoons of saved water from pasta. Add Lemon juice
and the cooked hot pasta. Add a little black pepper and salt to taste. May need very
little salt as anchovy is already salty. Stir to mix all ingredients. Serves 2.
COMMENTS: I have served this dish to anchovy haters and they do not know that it even
has them in recipe. You can garnish with remaining filets and lemon slices.
