Tortelline Soup


INGREDIENTS:

  • 1/4 lb Hot Sausage -- (casing removed)
  • 1/2 cup Green Pepper squares (1 pepper)
  • 1/2 cup Dried Onion
  • 1 Medium Clove Garlic -- minced
  • 1/4 tsp. Oregano
  • 2 Cans (10-3/4 oz can) Condensed Chicken Broth
    (College Inn brand)

  • 1 1/2 Soup cans of water

  • 1 Can (8oz) Tomatoes
  • 2 Tbs. Chopped Parsley
  • 1 Thin Zucchini (sliced)
  • 1 Pkg (1 lb.) Frozen Meat Tortelline

  • DIRECTIONS:
    Fry up the sausage (smashing it with a fork), together 
    with the green pepper, onion, garlic, oregano and 
    zucchini until done.  Stir to separate meat. Next, add 
    the remaining ingredients and bring to a boil.  Simmer 
    until done, approximately 20 minutes. 
    Stirring occasionally.  Salt and pepper to taste.
    


    COMMENTS: 
    This delicious soup recipe came from Jeannette's 
    Grandma, Florence Aiello from Scranton, PA.  
    According to Jeannette, she usually served it with 
    pizza or garlic bread.  Delicious!!!
